The driving force behind Hirotaka Yoshikawa

Until now, health has been the keyword that has been guiding my life.

I've been working in the planning and manufacturing of health food supplements for about 15 years now.
We've been doing this for that long. We listen to the customer's requests and then design things like, "OK, let's add this ingredient," or "OK, we'll cut out this ingredient and add this ingredient instead" to fit the budget.
We discuss this with the factory manager and adjust the time and costs required for production.
I've always had a strong interest in food and health, and living in that environment, delving into big themes like health, made me wonder if this supplement was actually good for my body.
There were many times when I began to question my work.
For example, there is a request to keep the price within this range, which is obvious. During the manufacturing process, light ingredients fly into the air when they are put on the production line. There are ingredients that can be made into granules to prevent this, but they have no health benefits in themselves.
It is easier to manufacture, easier to seal, faster to produce, and the overall volume of the product is larger.
It's cheap to manufacture. It can be made on time and within budget. I'm not saying it's bad for you.
However, as I worked, I began to worry about those small details.
It's because of the craftsmanship.
So I decided to make one myself. It didn't take long for me to decide.

Rakugo is great. Over the course of a hundred years or so, all the unnecessary things have been stripped away, and everything works perfectly.

While developing various supplements and health foods for work, I became fascinated with things like autoimmunity, intestinal environment, and natural lactic acid bacteria, and my eye fell on fermented foods.
When it comes to fermented foods, no matter which country you go to, there are always some local specialty foods.
There are always fermented foods in each country and region that have long been known to be beneficial to health.
At that moment, I remembered a time when my grandmother had made kimchi for me.
I thought this was a food that was both nutritious and had a great taste. It took two years to develop, but what helped me the most was my hobby, Rakugo. I enjoy Rakugo, and I have dozens of CDs in my car that I listen to all the time.
Rakugo has no unnecessary words. Over the course of a hundred years, all unnecessary words have been stripped away, and it functions perfectly.
Everything is necessary and there is not a single unnecessary word.
I like to pursue things to the fullest, so I think that coming into contact with the perfection and completeness of Rakugo was the most important thing for me to complete the "Mainichi Daikichi" regular delivery service. That's what I think now. There's no waste.
Everything is necessary and nothing is unnecessary.
It took three years to conceive, two years to develop, and five years in total, but we've finally created a flavor that we're happy with and can release it to the world.
It's really all thanks to Rakugo.

I was shocked when I saw the ingredient list of the organic food that I happened to see.

I travel abroad often for work, and I was surprised when I went into a German supermarket.
There were only products lined up that were certified organic.
When I went to Southeast Asia, I was surprised by the amount of organic cosmetics available.
I saw the difference with other countries with my own eyes. When I returned to Japan and went to the supermarket, I happened to look at the ingredients list of an organic product.
There was one organic ingredient listed, all other ingredients were non-organic.
It's not organic, but it's an organic product. I was shocked.
We decided then and there to go organic.
After doing some research, they found that there was no domestically produced kimchi that had been certified organic, so they decided to make organic kimchi from scratch.

When I started seriously developing organically certified kimchi, I realized that I had chosen an extremely difficult path.
The pursuit of flavor and the pursuit of organic certification were truly a continuous challenge.
First of all, the raw materials that can be handled are limited.
Once you find an ingredient that you think is right, you should first find out whether it has been certified as organic by the JAS.
If there is something there, we will make a prototype from it. If the result is not tasty, we will discard the ingredient.
I kept repeating the same thing. There is one thing I absolutely cannot compromise on, and that is "taste."
I absolutely did not want to end up with the idea that it's okay if it doesn't taste as good as it is because it's organic. I did not want to end up with self-satisfaction because we use such good ingredients.
Another thing is that since I was determined to make the "ultimate health food," I only used "healthy ingredients" that I was satisfied with.
The use of organic agave syrup, organic apple cider vinegar, and organic salt koji was all in pursuit of creating the "ultimate health food."
We also spent a lot of time figuring out how to create flavor using only organic ingredients, without using any chemical seasonings.
I love pasta, so I was inspired by the flavors of Italian cuisine and decided to add tomatoes and onions.
I also learned on YouTube that some people add miso as a secret ingredient to mapo tofu and even curry, so I added a little organic miso to "Mainichi Daikichi" to add depth to the flavor.
Doing that ended up taking me two years. (laughs)

Organic JAS certified kimchi "Mainichi Daikichi"

This delicious kimchi is made using carefully selected organic ingredients and has been developed over a period of five years.
After undergoing rigorous inspections, we obtained the organic certification "JAS".

Organic certification "JAS" mark

Agricultural products that meet the quality and labeling standards set by the Minister of Agriculture, Forestry and Fisheries are certified as organic by the JAS standard.
The JAS organic mark is designed to resemble the sun, clouds, and plants.
It denotes food that is produced using the power of nature without relying on chemical substances such as pesticides or chemical fertilizers, and is used on agricultural products, processed foods, feed, livestock products, and algae.
The Organic JAS mark is issued by a registered certification body, which inspects to ensure that production complies with the JAS organic food standards, and only businesses that are certified as such can affix the Organic JAS mark.
It is prohibited by law to label foods that do not have the "Organic JAS Mark" with names such as "organic" or "organic" or to use other confusingly similar labels.

Only Organic JAS prohibits genetic modification.

This standard prohibits the use of genetically modified materials not only in agricultural seeds, but also in materials used in fields and crops, processed raw materials, and food additives. No other standards or criteria are based on law that clearly prohibit the cultivation and use of genetically modified varieties or raw materials.
In other words, agricultural products and processed foods that have been certified as organic by the JAS are guaranteed to have not been genetically modified at any stage, from production to processing.

Organic food inspection and certification system
Organic JAS mark is a mark that imaged the sun, clouds and plants. It represents food produced by the power of the natural world without relying on chemical substances such as pesticides and chemical fertilizers, and is attached to agricultural products, processed foods, feeds, livestock products and algae.

Organic labeling
A registered certification body inspects whether the production of organic food conforms to JAS, and as a result, only certified businesses can affix the organic JAS mark.
